The stone crabs are best preserved uncracked. We suggest that you only crack the ones you will be eating at one sitting. If you are storing crabs for the next day, it is best to keep them refrigerated in an open container that drains in ice. If they’re cracked, store them in the refrigerator in the coldest section, but without ice. Cracked crabs will dry out sooner than uncracked ones, so they should be eaten as soon as possible.
The spots are natural to the stone crab claws. There is nothing wrong with the stone crabs if the have some black spots on them.
